Summer Salad

Ingredients

Rocket
Avocado, peeled and diced
Tangelos, peeled and cut into segments
Beetroot, peeled and sliced (raw)
Lime juice
Olive oil
Seeds (e.g. sunflower, chia, pumpkin)
Salt

Directions

Arrange a good portion of rocket leaves on a plate and place the avocado, tangelos, beetroot and seeds artistically. Whisk the olive oil, lime juice and salt to make a dressing. Dress the salad immediately before serving.

I'd heard what The Free Company were doing around seasonality, biodiversity and no-dig farming and I was so pleased to see they also had a Veg Club. The quality is top notch including wonderful fresh salad which is a big win in our house.
