Potato Leek Gratin

Ingredients

2 tbsp oil
4 baby leeks sliced into rounds
4-5 medium potatoes sliced into rounds
1-2 tbsp chopped fresh herbs of choice (thyme / rosemary / oregano etc)
1 tsp salt
1/4 tsp Black Pepper
375 ml chicken / veg stock

Directions

Saute baby leek and herbs in oil until the leeks are soft (approx 5 minutes). Add to a baking dish along with sliced potatoes, salt and a generous sprinkling of black pepper. Mix well and press down on potatoes to compact slightly. Pour the stock over the mixture and bake at 200C for approx 30 minutes or until potatoes are tender.
