Nopales con Huevo (Cactus with Eggs)

Ingredients

·2 tablespoons olive oil
·2 nopales, diced
·¼ onion diced
·1 jalapeño finely diced
·2 tomatillos, diced
·6 eggs
·1 teaspoon salt
·1/4 teaspoon black pepper
·Cilantro, finely chopped, for garnish

Directions

Heat olive oil in a large skillet, then add diced nopales. Cook for 3 minutes, or until it has turned a dark olive green color. Add the onion, jalapeno, and tomatillos. Cook for 1-2 minutes. In a separate bowl, whisk the eggs, then add them to the skillet along with a sprinkle of salt. Stir and cook eggs for 3-5 minutes. Garnish with cilantro. Serve with salsa, sliced avocado, and tortillas, if desired. Enjoy!
