Griddled Flat Beans with Lemon & Mint

Ingredients

2 cups Flat Beans, topped and tailed
3 tbsp olive oil
3 tbsp lemon juice
2 tbsp fresh mint
1/2 tsp salt
1/2 tsp peppercorn

Directions

Add the Italian flat beans to a steamer. Season with a little sea salt and steam for 10 minutes until tender. In the meantime prepare a grill. You can grill the Italian flat beans on any type of grill. The charcoal grill will give them a little more flavour. You can also use a grill pan on the hob. Once the beans finished steaming, grill them for 10 minutes on high heat, turning them once. You should see some charring on both sides. Remove the Italian flat beans from the grill and place them on a serving plate. In a small bowl mix olive oil, lemon juice, salt and pepper to obtain a tangy dressing. Taste it and adjust the ingredients to your liking. Add the dressing to the Italian flat beans so they are nicely covered. Scatter fresh mint leaves over the dish and serve immediately.
