Rich, tender and full of character, our rolled lamb shoulder is a brilliant choice for slow roasting. The natural marbling in the shoulder keeps the meat succulent as it cooks, rewarding long, gentle heat with melt-in-the-mouth texture and deep, comforting flavour. Easy to carve and beautifully versatile, it’s a winter favourite for good reason. Our lamb comes from our organic, pasture-fed and finished flock of Lleyn–Shetland crosses, raised with care here on The Free Company Farm. Their grass-based diet and calm, low-stress lives help produce meat with exceptional texture and flavour. A 1kg joint will comfortably serve 3–4 people.
