Our classic bone-in hams are cured the traditional way, using an old-fashioned brine made simply from natural sea salt and organic sugar. Infused with bay leaves, juniper berries, cloves, thyme and cracked black pepper, the cure adds a gentle aromatic flavour that enhances the natural character of the meat without overpowering it. This slow, simple curing method — free from nitrates and nitrites — allows the depth and richness of our pork to shine. Our hams are prepared from free-range Berkshire–Mangalitsa cross pigs, raised with care here on The Free Company Farm, where their hardy nature and generous fat cover produce exceptional flavour. 3kg serves 12–14 people
