Our boneless hams are cured the traditional way, using an old-fashioned brine made simply from natural sea salt and organic sugar. Infused with bay leaves, juniper berries, cloves, thyme and cracked black pepper, the cure imparts a gentle aromatic flavour that complements the natural richness of the pork. This slow, simple curing method — free from nitrates and nitrites — allows the full character of our meat to shine. Each ham is prepared from our free-range Berkshire–Mangalitsa cross pigs, raised with care here on The Free Company Farm. Their hardy nature and generous fat cover give the ham its depth, succulence and excellent texture. As a guide, allow 1kg of boneless ham to serve around four people.
