With the bones left on for extra richness, it makes a truly impressive centrepiece for the Christmas table. Our rib roasts come from our own herd of organic, pasture-fed Dexter cross cattle, raised slowly and with care here on The Free Company farm. Their grass-based diet and low-stress lives help create beef with outstanding depth and character. A 2kg, 2-rib joint will comfortably serve four to six people.
