The most tender cut of beef, our whole fillet makes an elegant and effortless centrepiece for Christmas. Lean, velvety and beautifully fine-grained, it cooks quickly and stays wonderfully soft — perfect for roasting whole or slicing into thick, luxurious steaks. For the best results, we recommend serving it no more than medium rare. This fillet comes from our own herd of organic, pasture-fed Dexter cross cattle, raised slowly and with care here on The Free Company farm. Their grass-based diet and gentle finishing give the meat its clean flavour and exceptional tenderness. A 500g piece will comfortably serve two people.
