Rich, tender and full of character, our bone in lamb shoulder is a brilliant choice for slow roasting. The natural marbling in the shoulder keeps the meat succulent as it cooks, rewarding long, gentle heat with melt-in-the-mouth texture and deep, comforting flavour. Meat should fall off the bone and it’s a cold weather favourite for good reason.
Our lamb comes from our organic, pasture-fed and finished flock of Lleyn–Shetland crosses, raised with care here on The Free Company Farm. Their grass-based diet and calm, low-stress lives help produce meat with exceptional texture and flavour.
A 2kg joint will serve 3-4 people.
The breed is Shetland and they are entirely pasture raised and finished.
