This beef comes from our own herd of organic, pasture-fed Dexter cross cattle, raised slowly and with care here on The Free Company farm. Their grass-based diet and gentle finishing give the meat its clean flavour and exceptional tenderness.
The rump cap, also known as the picana and similar to the tri-tip, is approximately 500g and is ideal for cooking over fire, frying and finishing in the oven or using as an alternative to a roasting joint. Perfect served pink.
A 500g piece will comfortably serve two people.
Our butchery products are frozen immediately after production to ensure they maintain their high quality and freshness. Simply defrost or put them straight in to your own freezer.
