Shaved Asparagus, Kohlrabi and Carrot Slaw

1 bunch asparagus, ends trimmed
1 bulb kohlrabi, greens removed and bulb peeled
1 large carrot, peeled
2 tablespoons olive oil
1 teaspoon Dijon mustard
Juice of 1 lemon
Salt and pepper, to taste


Using a sharp vegetable peeler, peel thin strips of asparagus and carrot. Cut the kohlrabi bulb into thick slices and shave with vegetable peeler. Combine the asparagus, kohlrabi and carrot shavings. Set aside. Combine olive oil, mustard, lemon juice, salt and pepper; whisk until emulsified. Pour dressing over vegetable shavings and toss to coat.
