Roasted Baby Beets and Sauteed Beet Greens

Ingredients

Baby beets with leaves
Olive oil
Rosemary sprigs
Balsaminc vinegar
Salt & Pepper

Directions

Remove the tops from the baby beets, put the baby beets in a roasting pan, toss with olive oil and add rosemary sprigs. Bake at 375F for about 30 mins. Remove the skins whilst warm and cut in half. Meanwhile saute the beet greens in olive oil and add a splash of balsamic vinegar. Season with salt and pepper and place on plate, top with baby beets.
