Penne pasta salad with celery and dried tomato

Ingredients

250 g Penne pasta
1 bunch baby celery or 2 stalks of celery
1 red capsicum
6 dried tomato in oil
225 g cottage cheese
3 tbsp pesto
fresh/dried basil (to taste)
pinch of salt
pinch of pepper

Directions

Cook the penne pasta according to the directions on the package. Strain the water and leave the penne in the strainer. Cut the celery, capsicum and dried tomatoes in thin strips. Mix the cottage cheese with the pesto. Put the penne pasta in a bowl, add pesto/cottage mixture and mix well. Add capsicum, celery and dried tomatoes, mix well again. Add a pinch of salt and pepper to taste. Garnish with basil.
