Carrot Soup

4 T butter
2 C onions, diced
1 kg carrots, chopped
4 C broth, chicken or vegetable
1 C orange juice
Salt and pepper to taste
Grated orange zest, optional


Saute onion in melted butter in a large stockpot. Cover and simmer over a low heat until tender. Add the carrots and broth; bring to a boil. Reduce heat, cover and simmer until carrots are tender, about 30 minutes. Blend or process and then add the orange juice. Season to taste and top with the orange zest (if using) just before serving.
